This is a custom welded, custom built offset Bbq smoker cooker built in St Augustine Fl. After build completion, the smoker got to its new home, at Jamie's house (it's owner), it got a high temperature resistant paint job.
The small box on the right is the firebox which contains the burning smoking wood. Then the heat and smoke goes through a small door and enters the larger rack grill smoking chamber. Since the firebox is lower than the smoking chamber, heat and flavored smoke automatically rise and enter the smoking chamber.
The cooking smoking chamber has a door on each side and when they are both opened simultaneously, you can see clear through and out the other side.
The bottom rack along with cooking meat will hold a pan of simmering water so the smoking meat does not dry out for its many hours of cooking and smoking.
This is a very large smoker. It will cook in excess of 120 lbs of meat at one time.
This is not like the cheap ones built out of 55 gallon drums that rust out in a few years. This is a professional rig valued at thousands of dollars.
The wall of the smoking chamber was thinner metal and the wall of the firebox was thicker plate steel. To keep them perfectly aligned so the door motion stayed smooth and closed tightly, we had to add the angle braces that you see here.
On the front we added a steering push/pull handle so the 500 lb smoker could be rolled around easily. I designed the steering handle so its out of the way when not being used, but easily and quickly can be accessed.
The rear tires aim constant straight, but the front tires swivel freely to follow the handle pull or push.
